LINZER - not only for Christmas


LINZER COOKIES

Recipe:
  • 300 grams flour
  • 100 grams powdered sugar
  • 2 teaspoons vanilla sugar
  • 200 grams unsalted butter (room temperature)
  • 2 egg yolks
  • 200 grams apricot jam
Mix flour with powedered sugar and vanilla sugar, than add butter and egg yolks. Process it into a smooth dough. Dough put to the fridge for 2 hours. On a lightly floured surface roll out the dough until it is about 3 mm thick. Using a cookie cutter (round, square, heart, etc.) cut out the cookies. Use a smaller cookie cutter to cut out the centers of half of the cookies on the baking sheet. Bake the cookies for about 12 minutes or until lightly browned around the edges at 180 degrees Celsius. Fill the cookies with jam, and sprinkle sugar.
